Macaroni Sausage Bake

One pound package bulk sausage (thawed if frozen)
One cup finely chopped onion

Cooking time: Fifteen minutes

3/4 cup uncooked elbow macaroni, cooked as directed on package
One can condensed cream of celery soup
2/3 cup milk
Two eggs, slightly beaten
2 cups shredded cheddar cheese

Oven temperature: 350 degrees
Baking time: Forty-five minutes
Servings: Six

In a heavy skillet cook the sausage and onion, breaking the meat with a fork and cooking until lightly browned. Drain off fat. Place the mixture in a ungreased casserole dish. Drain the cooked macaroni thoroughly; place over the meat. Combine the soup and milk in a saucepan; heat. Remove. Beat in the eggs slowly, then the shredded cheese, stirring well. Pour over the macaroni and bake. Serve hot from the oven dish with a green tossed salad.

Practically Perfect Plum Pudding

1/2 Cup butter finely chopped (freeze the butter and slice)
1/2 Cup sultanas
1 Cup dried plums
1 Cup dates
1/2 Cup chopped figs
1/2 Cup currants
1 Tblsp orange zest (fresh, not dried)
1 Cup white bread crumbs (fresh bread...no crusts)
1/4 Cup slivered almonds
1/2 Cup sugar
1 tsp cloves
1 Cup flour
2 tsp cinnamon
1 tsp nutmeg
1/2 Cup milk
2 well beaten eggs

1 tsp baking soda dissolved in one Tblsp warm water

Mix all ingredients but the fruit, then add fruit, turn out into well buttered bowl, place bowl in slow cooker filled 1/2 to 3/4 full of water (depending on the size of the cooker and the bowl) water should be within 1” of the top of the bowl with pudding mix. Cook on high for 5 hours or until knife inserted in the centre comes away mostly clean. (It won’t be completely clean due to the fruit.) The original recipe is one that dates from the 18th century (1700’s) and has actually been modified very little. Hints and tips: If you don’t have a crock pot...a big pan of water on the stove works as well. Kitchen scissors are a good quick way to chop the fruit. Sultanas are golden raisins (do NOT substitute raisins for sultanas....). Currants may take a bit of searching...but are essential for the flavouring.

Rum Sauce: one stick of butter, 1 1/2 Cup powdered sugar, 1/4 cup cream and rum to taste.

Pour warm rum sauce on slice of pudding for optimum flavour....
